My daughter, Linda, and I have been baking Nancy’s Fancy Cheddar Snaps for sale since 2008, but I have been making them in my kitchen for over 25 years. Back then, a dear friend of mine gave me a recipe for cheese straws that my friends and family adored.

Today we continue to use essentially the same recipe, changing only the shape from that of a traditional “straw” to a wafer. This shape, I believe, lets you fully savor the rich, cheddar cheese and the snappy, little kick of each wafer, while adding versatility for serving with dips and other hors d’oeuvres.

To ensure consistent quality, we make our wafers by hand, in small batches, using only premium, natural ingredients.
